Nose

Restrained and precise: bright apple and white peach dominate, accompanied by vervain and lemongrass. The bouquet feels cool, bright and crystalline – an aromatic world that whispers rather than shouts.

Palate

On the palate, the true finesse of this Auxerrois reveals itself: fine spice meets delicate carbonation and a subtle yet present tannin that gives the wine structure. The fruit remains elegant in the background – green apple and lemon set the tone. With just 11.5% alcohol, the wine feels light-footed and palate-cleansing, without sacrificing complexity.

Finish

Clear, refreshing and marked by mineral precision. The wine bids farewell with a citrus-fresh elegance that invites the next sip.

Terroir & Origin

The grapes come from the Lieu-dit Harth near Zellenberg, a cool location at 290 metres altitude with east-southeast exposure. The name „Les Forêts Oubliées“ – the forgotten forests – recalls the once densely wooded hills of Alsace. The soil of glacial moraine over Jurassic limestone-marl gives the wine its characteristic minerality and tension. The late ripening in this cool terroir preserves the vibrant acidity.

Grape Variety & Vinification

100% Auxerrois from 30-year-old vines. Hunter McKirdy vinifies with minimal intervention, allowing the terroir to take centre stage – the result is a wine of remarkable clarity and purity.
