Pale straw yellow with green reflections – fresh and vibrant in the glass.
Nose
Open and joyful: fully ripe cantaloupe melon, yellow pears, quince and white nectarine, delicately underpinned by gentle culinary herbs such as chervil and tarragon.
Palate
Juicy fruit with a generous character, accompanied by aniseed and once again chervil. The concentration of fruit lends a rich, viscous texture, despite the dry style and 13% ABV.
Character
Uncomplicated in the best possible sense – easy-drinking, generously fruity and yet entirely serious. A wine that brings pleasure without being overbearing.
Pairing
Pairs beautifully with Alsatian flammekueche, light poultry with a herb jus or a summery quince and fennel salad.
Notes
This cuvée of two grape varieties brings together the richness of Auxerrois and the freshness of Pinot Blanc. The vines are rooted in calcareous marl and gravel – the estate has been farmed biodynamically since 1997 and is Demeter-certified.

Fresh and juicy, with lingering herbal spice and a hint of aniseed that elegantly rounds off the succulent fruit.
Terroir & origin
Domaine Albert Mann, located in Wettolsheim on the Alsace Wine Route, is the union of two winemaking families with roots dating back to the 17th century. The vines for this cuvée are planted on calcareous marl and gravel and are on average 30 years old. Maurice and Jacky Barthelmé have farmed their 25 hectares biodynamically since 1997, with Demeter certification — working with horses rather than tractors on the steepest vineyard sites to protect the soil.
Grape variety & vinification
The cuvée comprises 75% Auxerrois and 25% Pinot Blanc. Over decades, the Barthelmés have learnt which grape variety belongs where — guided not by formula but by observation. Each parcel is tended individually according to organic and biodynamic principles.
Food recommendations
A versatile food companion: with grilled sea bass with fennel, asparagus with hollandaise sauce, tarte flambée with crème fraîche and onions, or a goat’s cheese salad with honey and walnuts.
Special characteristics
What sets this wine apart is its lusciously viscous texture combined with remarkable lightness — a wine that bears the domaine’s biodynamic signature without ever feeling heavy or intellectual. The herbal spice of chervil and tarragon gives it a distinctive and unmistakable character.
