Wine description for Le Rosé IGP 2025 by Chêne Bleu

Colour & appearance
A pale, clear rosé with a fine shimmer – entirely in the light style of its southern French models.
Nose
Classically elegant Provence character: redcurrants, grapefruit, white peaches and mirabelle plums, accompanied by a hint of garrigue herbs, white flowers and a touch of crushed limestone. Juicy fruit, aromatic and finely delineated.
Palate
Initially playfully light in the Saint-Tropez style, then revealing surprising substance: structure, fine texture and pleasant depth. Fresh acidity, minerality and a fine grip provide support – charm with backbone.
Finish
Clear, cool and mineral-driven with a delicate herbal echo – a finale that evokes mountain air rather than Mediterranean humidity.
Terroir & origin
Chêne Bleu is situated on Mont Ventoux at an altitude of 550 to 630 metres – the vineyards for this rosé are rooted in clay and limestone at around 530 metres. Mediterranean warmth during the day, significant cooling at night: this natural air conditioning extends the ripening period and lends the wines a freshness more reminiscent of the northern Rhône, combined with southern generosity.
Grape variety & vinification
Direct pressing of Grenache Noir – partly from vines around 60 years old – and Mourvèdre. Spontaneously fermented and aged in used casks, the fruit remains unadorned and the texture fine. Dry, with a moderate 12.5% ABV.
Food recommendations
Ideal with grilled sardines, Salade Niçoise, goat’s cheese with lavender honey or a tomato tart. Also a first choice enjoyed on its own on the terrace.
Special features
There is an unusual story behind Chêne Bleu: Xavier Rolet, former CEO of the London Stock Exchange, and his wife Nicole have been restoring a 9th-century monastery since 1993 and farm it biodynamically. That a rosé from old Grenache vines at this altitude shows so much depth alongside such lightness is the true surprise in the glass.
