Colour & Appearance
Deep, luminous cherry red with violet reflections – a wine that signals substance and seriousness even in the glass.
Nose
The nose is simply stunning: A crystalline blueberry note of rare purity dominates the first inhale. With some air, elegant nuances of cassis, black cherry and blackberry unfold, underpinned by delicate hints of cedar, graphite, fine wood and a touch of juniper. Complex, yet never overloaded.
Palate
On the palate, the juicy blueberry fruit asserts itself with authority and pulls an entire retinue of dark berries in its wake. The tannin is fine-grained, polished and of remarkable precision. The acidity is the true backbone of this wine: distinctly perceptible, impeccably integrated and possessed of a liveliness that makes the wine positively sing. Beneath this shimmers an underlying minerality that recalls the limestone of the terrace.
Finish
Long, sustained and characterised by this distinctive pure, blue fruit right to the final moment. An aristocratic finish that unites depth and finesse – rare for a wine from the Côtes de Bourg.
Terroir & Origin
Château Falfas is located in Bayon, Côtes de Bourg, on a terrace of clay and limestone – a terroir that bestows structure and minerality in equal measure. The vines are up to 75 years old, with a planting density of 7,000 stocks per hectare and a yield of no more than 29 hl/ha – figures that speak to concentration and depth.
Grape Variety & Vinification
A cuvée of approximately 70% Cabernet Sauvignon and Cabernet Franc as well as 30% Merlot. Biodynamically farmed – Veronique Cochran is the daughter of the renowned biodynamic consultant François Bouchet. Fermentation with natural yeasts, 24 months ageing in new and used barriques.
Food Pairing Suggestions
A wine of this structure and elegance demands worthy companions: lamb rack with herb crust, duck breast with cherry sauce, aged Comté or a classic Bœuf bourguignon. Also an excellent choice with game dishes such as venison loin.
