Wine Description for le Chevalier Côtes de Bourg AOC 2019 from Château Falfas
- Colour & Appearance
- Deep, luminous cherry red with youthful freshness and excellent depth in the glass.
- Nose
- Remarkably pure and focused: A blueberry note of rare clarity dominates the bouquet. With air contact, cassis, black cherries and blackberries unfold, underpinned by fine nuances of cedar, graphite and juniper. The oak is perfectly integrated and supportive, without dominating.
- Palate
- The blueberry fruit continues on the palate with impressive purity, bringing a spectrum of dark berries. The fine-grained tannin is now refined, yet present enough to provide structure. The acidity is the backbone of this wine – distinctly perceptible, perfectly integrated, it lends the wine lift and freshness. An aristocratic vintage that carries its power and maturity with elegance. Profound, balanced and suffused with juicy, blue fruit that carries through to the long finish.
- Finish
- Long-lasting with a fascinating combination of pure blueberry fruit, mineral depth and fine tannin structure. The acidity provides a refreshing, sustained conclusion.
- Terroir & Origin
- The vines are rooted on a terrace of clay and limestone in Bayon, Côtes de Bourg. Vines up to 75 years old at high planting density (7,000 vines/ha) and severely limited yields (29 hl/ha) guarantee concentration and depth. The underlying minerality of the limestone terroir is distinctly perceptible.
- Grape Variety & Vinification
- Cabernet-dominated cuvée (approximately 70% Cabernet Sauvignon and Cabernet Franc, 30% Merlot). Biodynamic viticulture under the expertise of François Bouchet. Spontaneous fermentation with natural vineyard yeasts following cool pre-fermentation. 24 months ageing in new and used barrels lends the wine complexity without over-oaking.
- Food Pairing Recommendations
- Entrecôte, lamb rack, beef fillet with pepper crust, braised ox cheeks, mature Comté or Manchego.
- Special Features
- A distinguished vintage from a historic estate dating from the 16th century, which has returned to former glory under Véronique Cochran. Biodynamic viticulture at the highest level – an insider tip from the Côtes de Bourg that can hold its own with Bordeaux classics.
