Colour & Appearance
Dark, almost opaque cherry red with youthful brilliance – a wine that announces its concentration already in the glass.
Nose
Remarkably vibrant and precise in its aromatics. Dominant blueberries lead the bouquet, accompanied by blackcurrant, ripe blackberries and black cherries. Beneath lie fine layers of undergrowth, mineral hints and subtle vanilla from barrel ageing. The fruit concentration recalls jam, yet freshness remains ever present – a balance one rarely finds in this price bracket.
Palate
Here the true class of this Côtes de Bourg reveals itself. The Cabernet Franc shapes it with its characteristic elegance: juicy, vibrant, with fine, silky tannins that never become intrusive. The acidity structure is cool and clearly defined, the extract sweet and ripe, the texture fine-grained and noble. A Bordeaux that combines drinking pleasure with substance – pure gourmandise without heaviness.
Finish
Persistent and fresh, with lingering dark berries and a mineral coolness that invites the next sip.
Terroir & Origin
The 20 hectares of Château Falfas in Bayon lie half on a terrace of clay and limestone. Vines up to 75 years old at high planting density (7,000 stocks/ha) and modest 29 hl/ha yields guarantee concentration and expression.
Grape Variety & Vinification
A blend of approximately 70% Cabernet Sauvignon and Cabernet Franc, complemented by 30% Merlot. Spontaneous fermentation with vineyard yeasts, 24 months ageing in new and used barriques. The biodynamically managed estate under Véronique Cochran works according to the principles of her father François Bouchet, a pioneer of French biodynamics.
Food Pairing Suggestions
Entrecôte or Côte de Bœuf, rack of lamb with herb crust, beef braised stew, game dishes such as venison medallions, but also with aged Comté or Tomme de Savoie.
