Colour & Appearance
Deep cherry red with a dark, concentrated core and a brightening rim – a wine that displays its maturity without sacrificing vitality.
Nose
Here reveals itself a mature, profound Bordeaux of remarkable complexity. Sweet cherry, plum and blackcurrant meld with earthy notes of damp forest floor and undergrowth. Particularly characteristic: lovage and rosemary impart an intense herbal spice that already awakens umami associations. To these are added light tobacco leaves, cigar box, black pepper and juniper. In the background shimmer cinnamon and roasted hazelnuts – a nose that is absolutely at ease with itself.
Palate
Juicy, meaty, spicy – this wine fully delivers on the umami promises of the nose. The melting tannin carries an earthy spice that dominates the flavour profile, whilst the fruit elegantly takes a back seat and serves as a structural foundation. Spices and herbs draw a hearty, refined character that stands on a stony framework. Accessible yet demanding – a remarkably well-balanced Bordeaux for moderate money.
Finish
Long and textured. Fine bitter notes pleasantly line the palate, bind the fruit once more and allow the wine to linger sustainably.
Terroir & Origin
Château Falfas is located in Bayon in the Côtes de Bourg, an underrated appellation on the right bank of the Gironde. The vineyards were planted in the 1980s and are entirely biodynamically farmed – a commitment that is reflected in the depth and authenticity of the wine.
Grape Variety & Vinification
The cuvée unites 55% Merlot, 30% Cabernet Sauvignon, 10% Cabernet Franc and complementarily Malbec. Ageing takes place classically in small barrique, with just over a third being new oak. After nearly a year in barrel it is bottled – an ageing that provides structure without overwhelming the fruit.
Food Pairing Suggestions
The hearty, umami-rich character makes it ideal for côte de boeuf with pommes allumettes, braised lamb shoulder with caramelised carrots or bean cassoulet with bacon. A wine for substantial, aromatic cuisine.
