Terroir & Origin

The Idig is a four-hectare monopoly vineyard site documented since the 14th century – the heart of Weingut Christmann. The steep, south-southeast-facing slope rests on massive limestone subsoil with terra fusca limestone scree, interspersed with buntsandstein scree and basalt. One of Germany’s few genuine Grand Cru vineyard sites.

Grape Variety & Vinification

Riesling, fermented spontaneously at higher temperatures after several hours of skin contact, subsequently aged in a large double oak cask. Biodynamic viticulture according to Demeter standards.

Food Pairing Recommendations

Turbot with fennel vegetables, scallops on cauliflower purée, veal sweetbreads with morels, aged Comté or goat’s cheese. The wine has the stature for demanding cuisine.
