Colour & Appearance

Nose
Intense and multifaceted: orchard peach and lemon zest meet lemon biscuit and dried flowers. Particularly fascinating is the herbal spice with sage, sorrel and wild mint. Notes of soy, dried biscuit, shell fragments and seaweed already hint at the pronounced umami component in the bouquet.
Palate
A fascinating interplay of tensions: the austere structure of Catarratto meets appealing fruit and crisp freshness. Salty-sweet and gripping – this dichotomy makes the wine so compelling to drink. The vibrant acidity carries the aromatics effortlessly and lends the wine energy and precision.

Terroir & Origin
The name Fontane Bianche refers to the white, barren, limestone-rich soils of Sicily, where the Catarratto grape develops its characteristic minerality. These austere soils shape the wine’s distinctive, austere character.
Grape Variety & Vinification
95% Catarratto forms the backbone, complemented by 5% Zibibbo (Moscato d’Alessandria), which contributes bouquet and elegance with a deft touch. Following 24-hour skin maceration, spontaneous fermentation in stainless steel takes place. Six months on lees impart additional texture and complexity to the wine.
