The Monte Tabor Valpolicella Ripasso DOC 2020 by Fidora embodies one of the Veneto’s most fascinating techniques: the Ripasso process, in which finished Valpolicella is passed a second time over the pomace skins of Amarone. The result is a wine of palpable depth and complexity that leaves behind the lightness of a classic Valpolicella without assuming the weight of an Amarone – an elegant middle ground with 14.0% alcohol that combines structure and drinking pleasure.
Terroir & Origin
The Valpolicella zone north-west of Verona is a landscape whose wine culture stretches back to antiquity. Limestone soils, amphitheatrical hills and a climate moderated by Lake Garda and shaped by Alpine influences form the foundation for wines with pronounced acidity structure and aromatic vitality. The vintage 2020 brought warm, dry conditions to the Veneto, favouring ripe, concentrated grapes.
Grape Variety & Vinification
The classic blend of Corvina, Corvinone and Rondinella is the heart of the Valpolicella tradition. Corvina provides the aromatic backbone with cherry and spice notes, Corvinone brings body and depth, whilst Rondinella contributes freshness and colour. The Ripasso process – refermentation on Amarone pomace – lends the wine additional density, silky tannins and a pleasant residual warmth without obscuring the varietal elegance.
