Character
This Ripasso embodies the Venetian art of double fermentation – a traditional technique in which finished Valpolicella is placed over the still-warm pomace of Amarone. The result is a wine with considerably more body, concentration and complexity than a classic Valpolicella, yet without the heaviness of an Amarone. At 14% alcohol, it displays the typical fullness and silkiness that characterise the Ripasso process.
Terroir & Origin
The Veneto region around Verona offers ideal conditions for the indigenous grape varieties of the Valpolicella zone. The hills between Lake Garda and the Lessini Mountains benefit from a temperate climate with cool nights that lend the grapes freshness and structure. Monte Tabor lies in this historic region, where time-honoured methods have been practised for centuries. The limestone-clay terroir shapes the minerality and elegance of the wines.
Grape Variety & Vinification
The classic Valpolicella blend of Corvina, Corvinone and Rondinella forms the foundation. Corvina provides cherry fruit and structure, Corvinone brings depth and ageing potential, whilst Rondinella contributes colour and spice. The Ripasso process – the second fermentation on Amarone pomace – enriches the wine with additional phenols, aromas and glycerol. This artisanal method demands patience and skill, yet it endows the wine with its characteristic layered complexity featuring notes of dried fruits, spices and a pleasant bitterness on the finish.
