Colour & Appearance
Lightly transparent, intense ruby red with the typical elegance of ripe Pinot Noir grapes from old vines.
Nose
Complex and dark-hued. The bouquet reveals undergrowth, forest floor and mushrooms, accompanied by fermented cardamom and tobacco. These are joined by subtle yeasty notes, wild berries and dried cherries – an aromatic profile that signals depth and maturity.
Palate
Juicy, firm and serious. A slightly sweet core is played upon by earthy and stony notes. The structure impresses: fine-grained tannins offer pleasant resistance, a clear acidity provides tension. A characteristic goût de campagne recalls Pommard and lends the wine rustic charm without rough edges.

Terroir & Origin
The Moulin aux Moines is one of three monopoly vineyard sites of the Domaine in Auxey-Duresses, located on the border with Meursault. The Vieilles Vignes from the 1950s are rooted at 300 metres altitude in a steep, dry terroir with distinctive limestone-marl composition. This exposed location in the upper part of the Clos shapes the wine’s concentrated, mineral character.
Grape Variety & Vinification
100% Pinot Noir from old vines, hand-harvested at modest yields of 38-44 hl/ha. Spontaneous fermentation with 10% whole bunches, maturation in Burgundian Pièces and Tonneaux without new oak – a purist vinification that places terroir and fruit centre stage.
Food Pairing Suggestions
An ideal companion to game dishes, braised venison or venison stew. Also an excellent choice with Coq au Vin, Bœuf Bourguignon, aged Comté or Époisses. The earthy notes harmonise beautifully with mushroom risotto or truffle dishes.
