- The Moulin aux Moines is one of three monopoly vineyard sites of the Domaine in Auxey-Duresses, located on the border with Meursault. The Vieilles Vignes from the 1950s are rooted at 300 metres altitude in a steep, dry terroir with distinctive limestone-marl composition. This exposed location in the upper part of the Clos shapes the wine’s concentrated, mineral character.

- 100% Pinot Noir from old vines, hand-harvested at modest yields of 38-44 hl/ha. Spontaneous fermentation with 10% whole bunches, maturation in Burgundian Pièces and Tonneaux without new oak – a purist vinification that places terroir and fruit centre stage.
