Purple is in 2017 a cuvée of 30 % Cabernet Sauvignon and 70 % Cabernet Franc. The Cabernet Franc vines are 45 to 55 years old, the Cabernet Sauvignon vines 70 years old. The vines are planted in loamy-silty soil on sandstone as well as in red flint on tuffeau .
The yield is 35 to 40 hl/ha. The grapes were harvested by hand in 12-kilo crates. They were mostly destemmed and fermented over 30 days with only infrequent pumping over. The maturation then took place over twelve months on the fine lees in Burgundian Pièces from five to seven years. The cuvée then matured again for half a year in the piece barrel.

Dense purple, violet reflections
Nose
Seductive and mystical at the same time. Underbrush, liquorice and juniper deliver neat ethereal and spicy notes. The Cabernet Sauvignon makes the cuvée drift in a completely different direction compared to the single-varietal Cabernet Franc. Blackcurrant, cassis, blackberry and elderberries are clearly visible. Dark chocolate, anise, leather and black pepper give the fruit a strong sparring partner. Graininess in the form of rye sourdough and bread crust provide it with a substantial platform. Very subtly, it reminds one of condensed milk and sweet cream butter in the very best sense. The Loire leaves characteristically animal notes in the red wines. This is also the case in the 2019 Violette, which has a restrained but present note of warm leather and horse saddle on the nose.
Palate
It appears as if wrapped in silk. Cool, elegant and full of finesse. The fruit jumps right into your face. The berry notes of the nose come to the fore in a similar form. Not banal, but demanding. Acidity, astringency and tannin are high on the agenda. At the same time, it comes across as very fleshy and positively rustic. A soapy note allows for a brief excursion into floristry. Lavender and violets spread out. In the aftertaste, it shows itself to be much more well-behaved. The aromas now seem coherent and in perfect balance. Full of elegance and style. It should also be noted that it is already flattering at a very young age. At the same time, it has a very good ageing potential. The development will be exciting to watch.
