  2. Nose

Fine reduction, zesty citrus notes, crisp orchard fruit, chalk and crushed oyster shells with an iodine-laden sea breeze.

  3. Palate

Dense and intense, yet vibrantly agile and lean; initially round, then developing a firmer mouthfeel, fine lively acidity, floral aromatics, white-fleshed fruit and a delicate salinity.

Tasting note

Colour & Appearance
Intense straw yellow with a vibrant sheen – a wine that signals substance from the very first glance.
Nose
The 2023 shows no perceptible oak influence – unlike its predecessor. Instead, there is a fine reduction, still-present lees notes, alongside zesty citrus fruit, crisp pome fruit, chalk and crushed oyster shells with a hint of iodised sea breeze. Cool, clear and inviting.
Palate
Dense and intense, yet at the same time vibrantly slender. Initially round, it becomes increasingly firm on the palate, with fine tannins and a lively, elegant acidity. Aromatically floral and fragrant, lightly citrussy, with white-fleshed fruit – a Chablis of balance and drive.
Finish
Intense and saline, with a fine zestiness that lingers long.
Terroir & Origin
Mont de Milieu lies close to the Grands Crus and was first mentioned in records as early as 1218. The name means “Middle Hill” – this was once the border between Burgundy and Champagne. The south-facing vineyard site rests on white clay and Kimmeridgian limestone. The Bouchards own 0.75 hectares here; the vines were planted in 1995 and half were replanted in 2016.
Grape Variety & Vinification
100% Chardonnay, hand-harvested on 13 September 2023, spontaneous fermentation, 13 months’ maturation in large wooden casks. Bottled on 20 November 2024 after coarse filtration. Romain and Damien Bouchard farm organically, using wild yeasts and minimal intervention – their gravity-fed cellar renders pumping unnecessary.
Food Pairings
The saline structure and maritime aromatics call for oysters, sole or scallops. Also a reliable match with white poultry in lemon sauce or aged Comté.
Special Notes
A Premier Cru from vines planted in 1995, half of them renewed in 2016 – and a wine that demonstrates why Domaine de l’Enclos ranks among the most exciting addresses in modern Chablis. La Revue du Vin de France describes these wines as a safe bet; this Mont de Milieu proves exactly why.
