Terroir & Origin
Les Grèves is considered the beating heart of Beaune. The Morey family’s parcel has been in their possession since 1969. The slope rises over 450 metres, where the soil transitions from sandy sections in the upper elevations to calcareous gravel – the foundation for the longevity and structure of this Pinot Noir.
Grape Variety & Vinification
Pure Pinot Noir vines, partly planted in 1976 and 1988 from a sélection massale. The mostly destemmed grapes undergo spontaneous fermentation with indigenous yeasts in tanks and neutral casks. Ageing takes place with a moderate 20% new oak. Thomas Morey works with organic certification, completely avoids fining and filtration for his red wines, and keeps the addition of sulphur extremely low at a maximum of 35 mg/l.
Food Pairings
Exquisite alongside tender saddle of venison, seared fillet of beef, classic duck breast with a berry reduction, or creamy Époisses cheese.
Particularities
The fact that Domaine de la Romanée-Conti entrusts Thomas Morey with the care of their vines in Montrachet underscores his exceptional status. This Beaune-Grèves showcases his stylistic signature: less oak and extraction, yielding maximum terroir finesse and natural brilliance.
