Colour & Appearance
Transparent, radiant ruby red of captivating clarity – a wine that reveals its unadorned, natural origins even visually.
Nose
An olfactory kaleidoscope: cherries, raspberries and wild raspberries meet camphor, herbal tincture and bay leaf. Joined by allspice and black pepper – a fascinating oscillation between hedonistic fruit and tart spice that reinvents itself with every swirl of the glass.
Palate
Electrifying! The wine positively storms across the palate, carried by a fine fermentation carbonic that sparkles like stardust. The juicy-tart fruit is structured by ripe acidity and enveloped in gentle phenolic texture. Wild and angular, yet never coarse – an impressive balance between energy and elegance.
Finish
Dynamic and persistent, with lingering cherry notes and a slightly bitter, herbaceous echo.
Terroir & Origin
An unconventional liaison: Gamay from Beaujolais meets Aligoté from Saint-Bris in northern Burgundy – a cross-regional cuvée that Athénaïs de Béru ventures with her négociant line.
Grape Variety & Vinification
Radically natural: the Gamay underwent whole-bunch fermentation in wooden vats with spontaneous fermentation, the Aligoté after long pressing of whole bunches. Both parcels were blended during fermentation, maceration lasted two to three weeks. Maturation over 12 to 18 months in Burgundy barrels, completely without additives, bottled unfined and unfiltered.
Food Pairing Suggestions
Perfect with charcuterie, grilled tuna, coq au vin or mushroom risotto. The wine’s vibrancy also harmonises beautifully with teriyaki salmon or spiced lentil stews.
