Colour & Appearance
Luminous straw yellow with subtle golden reflections – a wine that already hints at its maturity visually.
Nose
The bouquet demands attention and respect. A remarkable complexity unfolds: nutty notes, toasted brioche with salted butter, ripe apple and intense peach. These are joined by cold smoke, sage and menthol – an ethereal, refreshing dimension that lends the wine vibrancy despite its maturity.
Palate
Opulent and forceful on the attack, yet marked by remarkable precision. The chalky minerality provides elegance and balance, whilst the wine’s smoothness ensures drinkability. Earthy and mineral components contrast with hay and dried herbs. The fruit recedes in favour of roasted almonds and salt dough – a fascinating development that reveals distinct umami qualities.
Finish
Long and persistent, characterised by roasted aromas and mineral freshness. The saline component and nutty notes remain remarkably present.
Terroir & Origin
A single vineyard site (Vino Parcellaires) in Montsant at 325 metres altitude. The nearly seventy-year-old vines are rooted in sand with a chalky subsoil – a soil structure that is clearly reflected in the wine. Low planting density of 2,000 vines per hectare.
Grape Variety & Vinification
Grenache Blanc with scattered Macabeo vines. Hand-harvested at the end of August 2017. Fermentation in large French oak vats, followed by ten months of ageing on lees in 500-litre tonneaux – an élevage that lends the wine texture and complexity without dominating it.
Food Pairing Suggestions
Roasted turbot, scallops with hazelnut butter, calf’s sweetbreads, mushroom and Parmesan risotto, aged Comté or Manchego. The umami qualities make it ideal for Asian cuisine – such as miso-glazed fish.
