Character
Salvo Foti is a legend of Sicilian winemaking – an uncompromising advocate of indigenous grape varieties and traditional cultivation methods on Mount Etna. His Vinupetra Rosso unites the Provençal elegance of Grenache with the volcanic minerality of the Nerello varieties. The result is a wine of remarkable freshness and drinkability, which despite its Mediterranean origin never appears heavy or overwrought. With 13.5% alcohol and a dry style, it embodies the modern, terroir-driven interpretation of Sicilian red wines.
Terroir & Origin
The volcanic soils of Sicily, shaped by mineral-rich lava layers and high altitude, lend the wines a characteristic tension and freshness. Foti works according to the ancient Alberello system – low, free-standing vines that defy the extreme climatic conditions. This labour-intensive method, nearly extinct and now revived, enables natural yield regulation and concentrated grapes. The Mediterranean climate with cool nights preserves the acidity structure.
Grape Variety & Vinification
The blend of Grenache, Nerello Mascalese and Nerello Cappuccio is unusual for the region, yet demonstrates Foti’s experimental spirit. Whilst Nerello Mascalese provides structure and elegance and Nerello Cappuccio contributes colour and body, Grenache brings its typical red fruit character and spice. Vinification is carried out with minimal intervention – spontaneous fermentation, traditional skin contact fermentation and ageing that preserves the fruit and minerality rather than masking it with oak.
Food Pairing Suggestions
A versatile companion to Sicilian cuisine: Pasta alla Norma with aubergines and salted ricotta, grilled vegetables with olive oil, Caponata or Arancini. The mineral freshness harmonises beautifully with grilled fish, such as swordfish or tuna. Also an excellent choice with lamb ragù, herb-marinated chicken or aged cheeses.
