Wine description for VignadiMilo Caselle Etna Bianco Superiore DOC 2023 by I Vigneri di Salvo Foti

Character
This wine embodies what Etna stands for in the modern wine world: mineral precision, volcanic tension and an almost cool elegance that one would scarcely expect on a Sicilian island. The Caselle is a white wine of serious depth – dry, taut and with a long, saline finish that unmistakably comes from the mountain.
Terroir & Origin
The vineyard site Milo on the eastern flank of Mount Etna is considered the heart of the Etna Bianco Superiore DOC – one of the few Italian designations of origin that defines a single municipality as a quality level. The vines grow on volcanic basalt soil at considerable altitude, where cool nights preserve the acid structure and the terroir gives the wine a distinctive mineral texture. Etna is not a vineyard – it is a landscape, and this wine tells its story.
Grape variety & Vinification
Carricante is the indigenous white grape variety of Etna, robust in character yet with fine acid structure and natural freshness. In the hands of Salvo Foti – one of the most significant custodians of Sicilian wine culture and co-founder of the association I Vigneri – it is vinified with a minimalist, artisanal approach. Foti relies on old vines, traditional cultivation methods and an ageing process that lets the terroir speak without overworking it. The vintage 2023 should well reflect the balance between ripeness and freshness typical of Etna.
Food pairing suggestions
An ideal companion for Mediterranean cuisine: grilled sea bass or branzino in salt crust harmonise wonderfully with the wine’s minerality. Equally recommended are pasta con le sarde, Sicilian seafood risottos or simply raw oysters, where the wine’s salinity unfolds its full effect. Mild goat’s cheese from the region also pairs excellently.
