Colour & Appearance
Slightly rusty ruby red with violet reflections, slightly naturally cloudy – an unadorned wine that does not deny its origins.
Nose
Initially, the Notaria presents itself deliberately closed, reductive. Then a fascinating spiciness unfolds: wet forest floor, chalk, undergrowth and balsamic notes dominate. Mediterranean herbs such as sage and rosemary mingle with black olive, Assam tea, leather and juniper. The fruit – dark cherries, rosehip, blackberry – requires time and air to reveal itself. A wine that demands patience and rewards it.
Palate
Rustic, masculine, uncompromising. The tannin is present and structure-giving, coating the mouth – decanting is essential. Yet it is precisely this unpolished power that defines its character. The spicy aromas from the nose continue on the palate, the acidity remains lively and invigorating. A wine that does not seek to please, but to fascinate.
Finish
Long-lasting, spicy, with distinct terroir character. The balsamic notes and earthy minerality remain sustainably present.
Terroir & Origin
Montsant, 230 metres above sea level. The 85-year-old Grenache vines are rooted in sandy and chalky soils that give the wine its distinctive minerality. Low planting density of 1,500 vines per hectare enables concentrated, characterful grapes.
Grape Variety & Vinification
100% Grenache Noir from a unique clone. Biodynamic cultivation over many years shows its effect in increasing harmony. Spontaneous fermentation in steel tank, matured for ten months in large used French oak barrels, bottled unfiltered. A natural wine without compromise.
