Grilled lamb with rosemary, a hearty mushroom pan-fry or tapas with chorizo and pimientos.
Notes
For the Històric, Terroir al Limit purchases organic grapes – Grenache and Carignan – from families across the nine villages of the historic Priorat. It is fermented as whole bunches and never sees any wood. With this wine, Dominik Huber aims to help convert the Priorat to organic farming and to create a wine for tapas bars and trattorias.
Tasting note
Character
A Priorat that dances rather than thunders. Where the region is otherwise known for powerful, concentrated red wines, Dominik Huber relies on infusion rather than extraction – the result is a red of astonishing lightness and drinkability. With a moderate 13.5% ABV and dry ageing, the Historic Negre shows fine, fresh fruit, a certain floral-mineral impression and a supple mouthfeel that brings Burgundian models to mind.
Terroir & Origin
The Històric comes from the nine villages of the historic Priorat, including Torroja, Porrera, Escaladei and Poboleda. Terroir al Limit purchases the grapes from families who farm organically; this wine does not come from the estate’s own vineyards. The soils range from the typical schist to clay and granite as well as alluvial land.
Grape Varieties & Vinification
The classic Priorat cuvée of Grenache and Carignan: the Grenache contributes red fruit and a silky texture, while the Carignan provides backbone and tension. The decisive factor is the cellar philosophy: whole-bunch fermentation, with the grapes only lightly trodden and barely moved afterwards – a gentle infusion that draws out aromas without overloading the wine. Together with head winemaker Tatjana Peceric, Huber continues this path, which has been consistently pursued since 2009.
Food Pairings
A versatile everyday wine with a Mediterranean accent: it pairs beautifully with rack of lamb with rosemary, grilled duck breast or Pa amb tomàquet with jamón. Ratatouille, mushroom dishes and mature Manchego cheese also find a perfect companion at the table in this elegant, fresh red.
