In the glass

  1. Colour

Pale, slightly muted golden yellow with delicate green reflections.

  2. Nose

Wild herbs, lime zest and green pepper, behind them green mango, papaya, passion fruit and blackcurrant; benefits from a carafe and a large glass.

  3. Palate

Spicy and demanding on the palate, with salty citrus fruit, lively acidity, piquant tannins and a long, mineral finish.

  4. Character

Puristic and serious – a powerful white wine with depth that calls for dishes of equal intensity.

  5. Pairing

An ideal choice with aromatic dishes such as grilled fish with herbs, asparagus preparations or spicy Asian cuisine.

  6. Notes

From barren coral limestone soils at 340–480 m altitude, vinified only in the best vintages; spontaneous fermentation and 42 months of ageing in large neutral oak casks and stainless steel, bottled unfiltered.

Tasting note

Colour & appearance
Bright, slightly deep golden yellow with delicate green reflections — a wine that already promises substance in the glass.
Nose
Profound and closed at first: this Sauvignon demands a carafe and large glasses. Then a multi-layered picture opens up of wild herbs, yeasty notes, lime zest and green pepper. With air, exotic fruit pushes forward — green mango, papaya, passion fruit, along with blackcurrant and citrus throughout.
Palate
Spicy, striking, demanding. The minerality virtually froths over, the acidity is invigorating and precise. Citrus fruit, framed by salt, meets green mango; a piquant tannin gives the wine grip and contour. This is not an easy-going Sauvignon, but a serious, food-hungry white with depth.
Finish
Long, salty-mineral, with a piquant tannin echo — a finale that remains present minutes later and unmistakably calls for dishes of equal intensity.
Terroir & origin
“Ciringa” is Slovenian for Zieregg — the border runs straight through this vineyard. Directly adjoining the top Styrian site lie the Slovenian parcels of Domaine Ciringa at 340 to 480 metres above sea level. Sparse coral limestone soils beneath loose brown earth provide the foundation for purist, mineral Sauvignon Blancs. Behind the project stands Weingut Tement from Ehrenhausen, which has kept Southern Styria on the world map for decades.
Grape variety & vinification
100% Sauvignon Blanc, dry, 12.5% vol. The Reserve is only produced in the best vintages: spontaneous fermentation, then 42 months in large neutral oak casks and stainless steel tanks, bottled unfiltered.
Food recommendations
It needs counterparts with character: grilled zander fillet with herb butter, ceviche with lime and chilli, lamb cutlet with rosemary jus or Asian dishes with lemongrass and coriander. Also a striking combination with mature hard cheese.
Special features
The Ciringa line bears the Demeter logo — the wine comes from biodynamically farmed Slovenian sites belonging to the Tement family. Add to that its rarity: as a Reserve, it is only produced in outstanding years and matures for over three and a half years in the cellar before it is allowed into the bottle. A Sauvignon with great ageing potential — if you drink it young, give it air; if you cellar it, you will be rewarded.
