Verdejo

Native to the windswept, barren high plateau of Castile and León, the Verdejo grape shapes the oenological identity of central Spain like virtually no other white variety. Its strength lies in a striking combination of fresh, almost balsamic-herbaceous spice and juicy fruit reminiscent of grapefruit, fennel and bay leaf. On the palate, it always shows a tight-knit structure with a fine, varietally typical bitter note on the finish, which lends the wines grip and gastronomic tension. Just how clear and minerally deep this character is in the classic Rueda style is demonstrated by the single-varietal vinification from Victoria Ordóñez. That the variety can also shine beyond cool freshness is proven in warm Toro as a partner to Malvasia at Quinta de la Quietud, where it lends structure to a complex sweet wine with its vibrant acidity.
