Colour & Appearance
Pale greenish-yellow with brilliant reflections that emphasise the youthfulness of this 2023. In the magnum, the wine presents itself with remarkable clarity and vibrancy.
Nose
The Baiken displays the characteristic slate spice of its origin – smoky minerality meets yellow stone fruits such as ripe peach and apricot. Added to this are citrus peel, white flowers and a fine herbal note reminiscent of wild thyme. With air, a subtle honeydew melon develops.
Palate
Precise and focused with a vibrant acidity that carries and structures the wine. The 3.6 grams of residual sugar are perfectly integrated and lend the Riesling juiciness without ever tasting sweet. On the palate, yellow fruit, lime and that distinctive slate minerality dominate – which Peter Jakob Kühn works out so masterfully. Medium body with perceptible depth and complexity.
Finish
Long, saline-mineral with a stony coolness that refreshes the palate and invites you to the next bottle – or in this case, the next glass from the magnum. The slate spice lingers and leaves a precise, dry impression.
Terroir & Origin
The Rauenthaler Baiken is one of the most distinctive vineyard sites in the eastern Rheingau: south-west facing at 190-200 metres elevation with over 60% slope gradient. The sparse phyllite slate and the cool thermal conditions of the forest-surrounded valley basin characterise this wine unmistakably. Underground water veins supply the vines despite the sparse soils.
Grape Variety & Vinification
100% Riesling, hand-harvested, gentle whole-bunch pressing and spontaneous fermentation with natural yeasts. 18 months maturation on full lees in traditional wooden cask – classic, unmanipulated winemaking as it should be.
Food Pairing Recommendations
Scallops with butter, monkfish in white wine sauce, asparagus with Hollandaise sauce, pike-perch with herb crust or goat’s cheese of medium maturity. The magnum is excellent for larger gatherings.
