Wine Description for Ried Kapellenweingarten Sauvignon Blanc DAC 2023 from Sattlerhof

Colour & Appearance
Pale straw yellow with brilliant clarity – a visual foretaste of the precision this wine also displays on the palate.
Nose
Distinctly floral and aromatic: white and yellow flowers meet meadow herbs and a hint of muscat. These are joined by white currants, white-fleshed peach and yellow pears. A fine herbal spice and dark minerality round out the multi-layered aromatic profile – typical of the extreme altitude.
Palate
Precise, lean and peppery. The juicy fruit reveals itself primarily white-fleshed with subtle citrus notes, whilst green fruit characteristics remain pleasantly restrained. Instead, an elegant herbal and stony spice dominates, lending this polished, taut Sauvignon Blanc its distinctive character. The vibrant acidity (6.8 g/l) carries the structure perfectly.
Finish
Lightly saline and dark mineral – an aftertaste that makes the cool altitude virtually tangible. Long, focused and with sustained freshness.
Terroir & Origin
The Kapellenweingarten is, at 600 metres, the highest-altitude vineyard site of Sattlerhof. With gradients of 20 to 70 per cent, vines around 35 years old are rooted in calcareous quartz and gravel. The cool, airy microclimate delays ripening and bestows the wine with its remarkable freshness and minerality – Sauvignon Blanc from cool-climate viticulture in its purest form.
Grape Variety & Vinification
Hand-selected Sauvignon Blanc grapes, spontaneously fermented to 1.1 g/l residual sugar at moderate 12.5% alcohol. Maturation took place over two years in large, neutral oak – a method that gives the wine time to develop without overwhelming it with oak aromas.
Food Pairing Suggestions
Herbed goat’s cheese, pan-fried char, asparagus risotto, grilled courgettes or scallops with lemongrass. The minerality harmonises beautifully with oysters and seafood.
