Wine description for Puligny-Montrachet “Les Enseignères” AOC 2024 1500ml Magnum by Thomas-Collardot
- Character
- An unadorned Chardonnay: saline, taut, with precise citrus fruit and a fine chalky texture. No buttered toast, no clouds of vanilla – instead transparency, fine grain and a dry, mineral drive that lets the Puligny terroir speak without disguise.
- Terroir & Origin
- Les Enseignères is one of the best-known vineyard sites in Puligny-Montrachet, the white heart of the Côte de Beaune. Here, where calcareous soils and a particular aspect produce great white wines, Domaine Thomas-Collardot owns its most precious parcels – alongside Les Nosroyes and the Premier Cru Hameau de Blagny. On just 2.5 hectares, Jacqueline Collardot and her son Matthieu tend vines that once belonged to their grandfathers Henri Chavy and Maurice Thomas.
- Grape Variety & Vinification
- Pure Chardonnay, vinified with a gentle hand: soft pressing, 24 hours of settling, ageing in used 228-litre casks that have seen two to four previous fillings. Sixteen months on the fine lees lend depth without breadth. Certified organic since 2021, the estate largely dispenses with sulphur additions and does not fine – the result is a wine of crystalline clarity and razor-sharp precision.
- Food Pairings
- The saline tension and citrus fruit of this Puligny call for equally precise accompaniments: grilled sole with lemon butter, scallops on cauliflower purée, lobster in a light bisque or cured char with horseradish. Served alongside mature Comté or a simple poultry breast with morel jus, it shows why Puligny-Montrachet has been setting benchmarks for generations.
