- Here Sauvignon Blanc reveals its most sophisticated side: An Atlantic coolness runs through the bouquet with maritime notes of fresh seaweed, oyster shell and sea spray. Layered over this is an intense play of herbs – mint, chervil and coriander. Unusually fascinating is the subtle brioche note with freshly chopped almonds. White pepper and toasted coriander seed lend depth, whilst flint and limestone underscore the mineral provenance. The fruit – grapefruit, white peach, nashi pear, delicate hints of passion fruit and lychee – remains deliberately in the background.

- From the first sip it becomes clear: this is no fruit-forward Sauvignon, but a terroir wine par excellence. The fruit flows subtly and delicately beneath a cloak of pure minerality. Cold smoke and fine peppery spice dominate on the finish. The stony, mineral character conveys coolness and a certain seriousness reminiscent of great Chablis. What distinguishes this Pouilly-Fumé are depth, length and elegance – not upfront fruit.

- The vineyard site Caillottes sits on limestone at 190 metres altitude with west to south-west exposure. The 1.68 hectares are distributed across various parcels with 35 to 40-year-old vines, yielding a moderate 55 hl/ha – quality over quantity.
- Grape Variety & Vinification
- 100% Sauvignon Blanc, harvested in early September. Fermentation with natural yeasts: 60% in stainless steel tank, 30% in 350 to 400-litre barrels, 10% in concrete eggs. The domaine works according to biodynamic principles with lunar phases. Bottled without filtration on a fruit or flower day during the waning moon.

- The maritime minerality calls for Vietnamese-style oysters with fish sauce, coriander and chilli. Equally perfect: burrata with salsa verde and grilled bini or thinly sliced roast beef with sauce gribiche and crispy kale.
