Wine information
This deep Sauvignon Blanc is harvested from 45-year-old, biodynamically tended vines growing on the remote Les Coûtes du Bout parcel. The dominant soil type is a mix of caillottes, Oxfordian limestone soils and Kimmeridgian limestone. The unique winemaking process includes a complete fermentation in wooden barrels, a five-month maceration with the grapes, a gentle pressing, and finally six months of ageing in the same barrels. Antoine Gouffier humorously says that the winery does not produce red wines, moreover, the maceration is done here for pure pleasure.
Color
With its astonishingly bright straw yellow colour, the wine defies half a year of maceration.
Scent
The engaging fragrance of this Vin de France enchants with its simplicity and subtle note, distancing itself from the traditional green-aromatic scent of typical Sauvignon Blancs from the same vintage. A pleasant floral note paired with a bouquet of pomelo, ginger and apple including peel unfolds on the nose.
Taste
This wine is a real delight on the palate. While it has the characteristics of a classic Vin de Macération, it remains unobtrusive and has a fine balance. Licorice notes and a slightly bitter hint of peel give the wine structure and depth. Thanks to the cool weather conditions during the ageing period, the wine's acidity was nicely rounded. The Caillottes soils give it an intense minerality that comes through clearly in its juiciness and fragrance.

Enjoy this wine accompanied by orange basil glazed scallops with crispy bacon, a parmesan crab risotto with rocket or a steamed beetroot with sea salt and red pepper.
