Wine description for Sancerre blanc AOC 2025 from Domaine Vacheron

Character
The Sancerre blanc from Domaine Vacheron embodies everything this appellation is renowned for worldwide: precise minerality, vibrant tension and a distinctive connection between grape variety and soil. Vacheron is among the few estates in the Sancerrois that consistently embrace biodynamic viticulture – an approach reflected in the depth and authenticity of their wines.
Terroir & Origin
The vineyards surrounding the town of Sancerre in the eastern Loire Valley are characterised by three distinctive soil types: the flint-rich Silex soils, the clay-limestone Terres Blanches and the Caillottes with their limestone scree. This geological mosaic lends Vacheron’s wines particular complexity and that characteristic, almost saline stone fruit minerality typical of Sancerre. The hillside location and the continental climate of the Sancerrois favour slow, steady ripening.
Grape Variety & Vinification
The Sauvignon Blanc finds perhaps its most elegant expression in Sancerre – far removed from the loud aromatic abundance of other wine regions. At Vacheron, the grape variety is treated with the utmost respect: gentle hand-harvesting, spontaneous fermentation with wild yeasts and careful maturation that preserves natural freshness without masking the depth of the terroir. The wine remains dry and lively, with a structure that also makes it suitable for short-term ageing.
Food Pairing Suggestions
A classic companion to goat’s cheese – particularly the local Crottin de Chavignol – as well as oysters and grilled river fish. Equally harmonious with Vitello tonnato, asparagus with hollandaise or light Asian dishes with citrus notes. A wine that shines at the table and need not be in the spotlight.
