Colour & Appearance
Pale, clear yellow with a silvery rim – a wine that already promises precision and purity in the glass.
Nose
The nose displays crystalline clarity. Maritime associations dominate: salty sea breeze, oyster shells, damp pebbles. These are joined by kitchen herbs such as chervil, coriander and borage, along with cedary, citric notes and a hint of white pepper. Subtle fruit notes of grapefruit zest and yellow stone fruit deliberately remain in the background – here terroir reigns supreme.
Palate
On the palate unfolds what one expects from a great Pouilly-Fumé: liquid stone. The minerality is austere, direct, almost ascetic – like licking a chalky rock. Cool fruit and a ripe, precise acidity provide tension and elegance. Not a gram of excess, not an empty promise.
Finish
Long, saline, with a lingering echo of white pepper and cedarwood. The finish is dry and mineral – and leaves you with the desire to pour another glass immediately.
Terroir & Origin
The grapes grow on weathered Saint-Doulchard marl, interspersed with fossilised Exogyra virgula oysters and thin layers of iron-rich glauconite. This extraordinary subsurface mosaic explains the wine’s unmistakable maritime minerality – a direct conversation between soil and glass.
Grape Variety & Vinification
Sauvignon Blanc, spontaneously fermented in stainless steel. Sulphur is added only shortly before bottling in minimal quantities – an approach that allows maximum transparency of terroir. The du Bouchot estate is the first biodynamically certified producer in Pouilly-Fumé; since Antoine Gouffier took over in 2019, the estate has gained further in consistency and quality.
Food Pairing Suggestions
