Wine Description for Pinot Extra Brut 2021 from Weingut am Klotz

Colour & Appearance
Radiant golden yellow with lively, fine-beaded effervescence – a sparkling wine that already signals energy and precision in the glass.
Nose
The nose is of remarkable complexity: vineyard peach and bright red fruits meet nutty notes, bark and noble mushrooms. Added to this is an unexpected yet fascinating spice – saffron – as well as pronounced minerality and chalky character, which unmistakably reveals its origin at Isteiner Kirchberg. A subtle herbal spice rounds out this multi-layered bouquet.
Palate
On the palate, the sparkling wine shows itself juicy and charming: nutty yeast notes from extended time on lees combine with vibrant fruit and an invigorating carbonation, elegantly woven into the overall character. A seductive salinity on the finish lends the wine tension and depth.
Finish
Long, mineral and characterised by fine limestone notes. The stimulating acidity carries the finish with freshness and vitality – precise, dry, persistent.
Terroir & Origin
The Spätburgunder grapes come from the renowned Isteiner Kirchberg in Baden, a terroir characterised by calcareous soils that lend the base wine its characteristic minerality and crisp acidity structure.
Grape Variety & Vinification
Pure Spätburgunder, harvested early for maximum freshness. The base wine matured half in well-used barrique, the other half in stainless steel – an ageing regimen that promotes both complexity and purity. Tirage bottling in July 2022, followed by at least 34 months on lees. Disgorged in March 2025 with minimal dosage of 2 g/l (Extra Brut).
Food Pairing Suggestions
An ideal aperitif that equally impresses as an accompaniment to savoury canapés, oysters, flammkuchen or spicy hard cheeses. The saline minerality makes it the perfect partner for seafood and Asian-inspired starters.
