Wine Description for Pinot Extra Brut 2021 from Weingut am Klotz

Colour & Appearance
Radiant golden yellow with lively, fine-beaded mousse rising elegantly. The perlage displays itself with grace and persistence – a visual promise of maturity from over 34 months on the lees.
Nose
Complex and mineral-driven: vineyard peach and pale red fruits meet nutty notes and tree bark. These are joined by noble mushroom notes, a distinctive saffron spice and the chalky minerality of the Isteiner Kirchberg. Herbal nuances round out this multifaceted aromatic profile.
Palate
On the palate, the sparkling wine reveals itself as juicy and charming with yeasty, nutty notes and vibrant fruit. The carbonation is perfectly integrated, invigorating without being intrusive. A saline minerality runs through the wine, lending it tension and drinkability. The low dosage of just 2 g/l underscores its purist, terroir-focused character.

Terroir & Origin
The early-harvested Pinot Noir grapes come from the Isteiner Kirchberg in Baden. The chalky soils of this vineyard site impart the sparkling wine with its distinctive mineral structure and crisp, invigorating acidity.
Grape Variety & Vinification
100% Pinot Noir. The first fermentation took place half in multiple-use barriques, half in stainless steel. Following tirage in July 2022, the sparkling wine matured for at least 34 months on the lees before being disgorged in March 2025. The minimalist dosage of 2 g/l makes it an Extra Brut.
Food Pairing Suggestions
The perfect aperitif, which also shines with oysters, scallops, aged Comté, vitello tonnato or sushi. Its saline minerality harmonises beautifully with all savoury appetisers.
