Pale yellow with silvery reflections, transparent and youthfully radiant.

Nose

Remarkably restrained for a young Pecorino. The aromatic composition reveals subtle tropical notes of passion fruit leaf and passion fruit, underpinned by hints of papaya and star fruit. The floral nuances of orange blossom are accompanied by a distinctive herbal spiciness of bay leaf and chervil in the top notes.

Palate

The attack presents itself with a remarkable bitter phenolic character, which lends the wine a powdery grip. The restrained tropical fruit displays itself with refreshing discipline, whilst the ripe acidity acts moderately in the background. Citrus notes manifest themselves more through their essential oils than through their juice – a sign of the precise winemaking by Francesco Cirelli.

This Pecorino from the Colline Pescaresi in the Abruzzi is the result of careful winemaking. The grapes come from lean clay-limestone soils, are hand-harvested and spontaneously fermented with indigenous yeasts in stainless steel tanks following 24-hour maceration. With 12.0% alcohol and minimal residual sweetness, it presents itself as a perfect expression of the terroir.

Food Pairing Recommendations

The restrained fruit and the distinctive phenolic structure predestine this wine for combinations with grilled fish, shellfish and regional pasta with shellfish dishes. It also forms an excellent companion to goat’s cheese and dishes with fresh herbs.
