Wine Description for Pajoré Barbaresco DOCG 2023 1500ml Magnum by Sottimano

Character
The Pajoré ranks among the great single-vineyard wines of the Sottimano house – a Barbaresco that exemplifies the philosophy of this family winery from Neive: precise, terroir-driven, with the courage to pursue elegance rather than power. The magnum bottle (1500 ml) promises ideal ageing conditions – greater volume, slower development, deeper complexity over time.
Terroir & Origin
The Pajoré vineyard site lies at the heart of the Barbaresco region in southern Piedmont. The calcareous Tortonian soils – rich in tuff and marl – endow the Nebbiolo with pronounced mineral tension and aromatic finesse. The Langhe valley with its continental temperature fluctuations between hot summers and cool nights is crucial for the development of structure and aromatic complexity. The 2023 vintage was characterised by warmth in Piedmont, yet produced wines of substance and depth in the finest vineyard sites.
Grape Variety & Vinification
Nebbiolo is one of Italy’s most demanding and rewarding grape varieties – thin-skinned, high in tannins, naturally high in acidity, and yet capable of a complexity that few varieties in the world achieve. Sottimano employs traditional artisanal winemaking with extended maceration periods and ageing in barrique and large wooden casks, always with the aim of letting the terroir speak, not the wood. The result is a wine that unites power and transparency – not a showpiece wine, but a wine for the patient.
Food Pairing Recommendations
Classic Piedmontese cuisine is the most natural accompaniment here: Brasato al Barolo, Tajarin with white truffle or aged Castelmagno cheese. The wine also harmonises beautifully with wild boar ragù, braised beef or Risotto al Barolo. The magnum bottle is particularly recommended for festive occasions – and for those willing to grant the wine several more years of cellar rest.
