- Patience is key here. The wine initially appears closed with distinct reductive sulphur – a typical characteristic of deliberately reductive maturation. After generous aeration, ideally in a decanter, an enchanting bouquet unfolds: roses and violets meet preserved wild strawberries and raspberries, underpinned by fine notes of liquorice and cinnamon.

- On the palate, the Mayschosser reveals its true class. Despite the initial reduction, it develops remarkable dynamism. At under 11% ABV, it is light, yet never thin – rather fresh and lightly creamy with a hint of extract sweetness and vanilla. - The roughly 15-year-old vines are rooted in the characteristic Mayschosser vineyard sites with stony to slightly loamy slate weathering soils. The vineyards, originally planted by Benedikt’s father, are managed according to organic and biodynamic principles as well as the principles of permaculture.
- Grape Variety & Vinification
- Meticulously selected fruit is spontaneously fermented in open stainless steel tanks. Maturation takes place over two winters in used large and medium oak casks, deliberately reductive and without chaptalization. Only minimal sulphur additions before bottling – an uncompromising approach to authentic Pinot Noir.

- Its lightness and freshness make it ideal for roasted duck breast, Coq au Vin, mushroom risotto or aged mountain cheese. Also an exciting pairing with tuna tataki or pan-fried salmon.
