In the glass
Colour
Bright straw yellow with a fine, lively mousse.
Nose
Bright citrus notes of lemon, grapefruit and citrus zest, accompanied by apple, pear, red berries, a touch of wet stone and candied ginger.
Palate
Initially austere, taut acidity and citric freshness that give way to a supple, vinous texture; a long, slightly saline finish with distinctly bright fruit tones.
Character
Dynamic, direct and balanced – an approachable yet profound natural Champagne that places terroir above style.
Pairing
Oysters or cured ham, ceviche and other marinated fish dishes, alongside aged hard cheeses such as Comté.
Notes
Disgorged without dosage (0 grams), unfined, unfiltered and only minimally sulphured; the base wine matures partly in stainless steel and partly in used Burgundy barriques. The Ecocert-certified estate works with wild yeasts and represents the new, terroir-driven generation of Champagne from the Côte des Bar.
Tasting note
Colour & appearance
Bright straw yellow with a fine, lively mousse – precise and inviting in the glass.
Nose
A bright-toned, clear bouquet: lemon, grapefruit and citrus zest lead the way, flanked by apple, pear and a hint of red berries. Behind them, flashes of wet stone and candied ginger emerge. A brief, slightly volatile note in the first few minutes quickly dissipates – then the wine reveals its full purity.
Palate
At first almost austere in its tension: citrus freshness, a straight, clear line of acidity. Then the supple, vinous texture surprises, contributed discreetly by the used wood. Dynamic, balanced, without any heaviness – a Champagne that is easy to drink yet invites contemplation.
Finish
Long and faintly saline, with lingering bright fruit notes. The absence of dosage leaves nothing to hide at the end – only stone, fruit and precise acidity remain.
Terroir & origin
The grapes come from Neuville-sur-Seine in the Côte des Bar, the southern part of Champagne, where Pinot Noir and Chardonnay grow on chalky soils above the Seine. Raphaël Piconnet and Hannah have run the estate since 2015 and had it certified organic by Ecocert in 2019. Their approach: one plot, one wine – terroir expression rather than house style.
Grape varieties & vinification
A blend of approximately 50% Pinot Noir, 40% Chardonnay and 10% Meunier from the 2022 vintage (undeclared). 60% of the base wine was fermented in stainless steel, 40% in used barriques; further maturation took place entirely in used Burgundy casks. Disgorged in February 2025 – with zero grams of dosage, as a resolute Brut Nature.
Food pairings
Its saline, lean character makes it an ideal opener for a meal: oysters, prawns with lemon or sashimi. It is also a compelling choice alongside fish fillet in a buttery citrus sauce or a young Comté.
Special features
No dosage, no fining, no filtration, and only minimal sulphur if any at all: here the pure grape takes centre stage. The fact that this successful combination of taut tension and supple richness comes from a vintage with a total production of just 12,500 bottles makes every bottle a rarity.
