Colour & Appearance
Sparkling straw yellow with green reflexes, medium-sized perlage and persistently lively mousseux – a sparkling wine that announces its vitality visually from the outset.
Nose
Remarkable is the inner composure of this cuvée, despite its complex multi-layered character. Yellow fruit – predominantly grilled pineapple – meets intense green herbal notes. The thirty months on yeast lees manifest themselves in butterscotch and lemon tart, whilst bergamot and lime provide freshness. A bouquet of lemon balm, sage and thyme lends this Blanc de Blancs its Mediterranean vitality.
Palate
The initial attack reveals a juicy, drinkable side with a perceptible edge. The mousseux builds creamily and unfolds yeasty, yellow aromas with smoky accents. Then comes the decisive moment: the acidity sets in and pierces the smoothness with positive tension. This turn reveals the mineral structure – a classic hallmark of the Kamptal. In the finish, fruit and herbs duel in a lingering aftertaste that persists for minutes.
Finish
Long-lasting and complex, with an interplay between fruity and herbal notes that resonates long afterwards. The Brut Nature dosage (0 g/l) underscores the purist approach.
Grape Variety & Vinification
A cuvée of Chardonnay, Pinot Blanc and Pinot Gris, harvested in 2018 and 2019. Gentle pressing with only 50% yield, fermentation in neutral oak, malolactic fermentation. The base wine matured for one year on the lees in oak, followed by further months on fine lees. Minimum 36 months on yeast lees after the second fermentation, disgorged September 2023.
