Naturally hazy ochre, which already reveals visually the artisanal production and the unadulterated character of this exceptional beverage.
Nose
A fascinating aromatic complexity unfolds: quinces form the fruity foundation, whilst yarrow, linden blossom and dried nettles contribute herbal nuances. To these are added apples and pears, complemented by delicate tea notes and subtle hints of verbena, cornflower and calendula. A fragrant bouquet that conveys pure nature.
Palate
Impressively well-balanced between subtle sweetness and elegant fruit. The silky texture reveals the considered extraction of the herbal infusions. A fine tannin structure lends the beverage complexity and depth without dominating. With only 2.6 g residual sugar per 100ml, the Justė comes across as refreshing and never cloying.
General Information
Andreas Sattler creates here a unique beverage for his restaurant, based on an old, particularly aromatic quince variety. The various herbal extracts are brewed at different temperature levels – a process that ensures optimal extraction of the respective aromatic compounds.
Food Pairing Recommendations
Perfect as an aperitif or digestif. Harmonises beautifully with goat’s cheese, herb terrine or smoked fish. Also an interesting alternative to apple strudel or other fruity desserts.
