The Carignan, a true veteran, planted in 1913 in the single vineyard Las Trabasseres of the Piémont Pyrénéen region, sits enthroned on pure slate soil. It matures spontaneously and is stored in used wooden barrels.
Color
In colour, this red wine shines with a dark purple that is punctuated by violet reflections.
Nose
Once known by its vineyard name Las Trabasseres, this wine now goes by the name Isabal. This wine, whose vines already have a century under their belt, captivates with an intense, ripe bouquet that nevertheless has a clear, fresh note. The bouquet is reminiscent of aromas of blackberries and mulberries, sour cherries and a hint of cassis, underpinned with garrigue, fermented cardamom and dark tobacco leaves. A hint of mint and dark stone round off the harmonious olfactory experience.
Palate
On the palate, the Carignan is excitingly fresh, juicy and intense. A clear expression of dark, crisp fruit paired with stone, garrigue and fine wood can be clearly tasted. The venerable, deep-rooted vines transmit a vibrant slate minerality to the palate, accompanied by a tangy acidity. Despite its depth and richness, the wine retains a certain lightness. It is delicate and fine, but at the same time blessed with a silky tannic texture and an ethereal minty tone.
Food recommendations
Accompanying dishes include roasted aubergine with miso paste, beef steak on a bed of celeriac and potato puree garnished with capers and black olives. Alternatively, smoked venison fillet on polenta with a sauce of fresh blackberries is also suitable.
