Wine Description for Pinot Gris Dry 2024 by Ökonomierat Rebholz

Colour & Appearance
Unusually for a Pinot Gris, this wine presents itself in a delicate pale pink – a first indication of the extended skin contact time that gives it substance and character.
Nose
The bouquet is of refreshing clarity: freshly grated red and yellow apples dominate, complemented by notes of storage apples, which lend the wine a subtle maturity. These are joined by melon and peach, whilst a nutty component of sunflower seeds and hazelnuts provides depth.
Palate
On the palate, a juicy, lively wine unfolds with remarkable structure. Despite complete dryness (only 0.5 g/l residual sugar), it possesses a fine extract sweetness that harmonises perfectly with the piquant spice. The fine tannin grip – a result of the skin contact time – lends it texture and backbone without being obtrusive. Elegant and voluptuous, with excellent balance between fruit and structure.
Finish
The finish is juicy and precise, with lingering freshness and a subtle nutty note that resonates.
Terroir & Origin
The vines are rooted in the characteristic loess loam of the Palatinate, which gives the wine its mineral structure and substance. The terroir of one of Germany’s most renowned wine estates is reflected in its precision and elegance.
Grape Variety & Vinification
Cultivated and hand-harvested according to respekt-BIODYN standards. Extended skin contact time for greater extract and structure, natural sedimentation for clarification, spontaneous fermentation and maturation in stainless steel at a moderate 12.5% alcohol. The low acidity of 5.8 g/l makes it accessible without sacrificing freshness.
Food Pairing Recommendations
A versatile companion: pan-fried char, veal schnitzel with cream sauce, asparagus in all its variations, goat’s cheese, mushroom risotto or simply as an aperitif. The structure also pairs well with heartier dishes such as chicken curry.
Special Features
A Pinot Gris with ambition and accessibility in equal measure – the rare pale pink colour and the fine tannin grip make it a characterful representative of its kind, impressively embodying the biodynamic philosophy of the Rebholz estate.
