Wine Description for La Cuvee Brut 2019 by Gramona

Colour & Appearance
Luminous greenish-yellow in the glass, with fine, persistent perlage – a visual harbinger of the elegance to come.
Nose
Refreshing and inviting, this Cava presents itself with notes of stone fruit and white flowers. The 36 months on the lees reveal themselves subtly through delicate hints of almonds and biscuit, which hold back with distinction – exactly as it should be.
Palate
Bright and fresh on the attack, with a creamy mouthfeel thanks to the fine bubbles. Crisp apple and citrus notes dominate, whilst the yeast aromas remain tastefully in the background. The balance between fruit and yeast is exemplary. This sparkling wine shows no heaviness whatsoever – instead, it impresses with elegance and a fine mineral touch.
Finish
The slightly bitter finish is characteristic of Xarel.lo and extremely appetising. The low dosage of just 5g/l ensures that the finish is soft and not overly steely – a perfect equilibrium.
Terroir & Origin
The grapes come from biodynamic cultivation in the Penedès region. Gramona belongs to the renowned association Corpinnat, which separated from the DO Cava in 2019 and established strict quality standards for artisanal sparkling wine production.
Grape Variety & Vinification
Classic Penedès blend of Xarel.lo, Macabeo and Parellada. 15 per cent of the base wine matures for one year in 300-litre barrels, the remainder in stainless steel. Following traditional bottle fermentation came a 36-month period on the lees. The wine is Demeter-certified.
Food Pairing Suggestions
Excellent with prawns, Thai curry with vegetables or poultry, or simply as an elegant aperitif. The low dosage and lively acidity make it the ideal companion for spicy Asian cuisine.
