Wine description for Gemischter Satz mit ACHTUNG 2021 by Loimer
- Colour & appearance
- Bronze-hued, slightly hazy in the glass – a wine whose appearance already signals that time on the skins and the absence of fining have left their mark.
- Nose
- An aromatic profile one might sooner expect in a Normandy cider cellar than in the Kamptal: dry cider, propolis, alongside hay, herbs and blond tobacco. Behind these, hints of cinnamon and a touch of baked goods emerge – austere, smoky, and intriguingly, almost uncannily unfruity.
- Palate
- Taut and grippy, with a texture reminiscent of fired clay. Light tannins meet pleasing volume, while herbal and spicy-savoury notes echo the bouquet. The acidity is rounded and balanced, and the 12.5 per cent alcohol remains unobtrusive.
- Finish
- Long and precise, with a fine salinity on the finish – the moment when this wine most insistently calls for food.
- Terroir & origin
- Loimer is based in Langenlois in the Kamptal, one of Austria’s most geologically fascinating wine-growing regions: primary rock, loess, volcanic remnants, complemented by cool air from the Waldviertel and Pannonian warmth from the south. Fred Loimer, co-founder of respekt-BIODYN, has been farming biodynamically since 2006 – and the “mit ACHTUNG” line serves as his playground for uncompromising natural wines.
- Grape variety & vinification
- A modern Gemischter Satz made from Riesling, Grüner Veltliner, Roter Veltliner, Welschriesling, Traminer and Sauvignon Blanc, harvested by hand. Two weeks of skin contact with both destemmed and whole berries, fermentation in large wooden casks, twelve months on the gross lees followed by a further eight on the fine lees. Bottled unfiltered, unfined and without added sulphur – the 2021 vintage was bottled in June 2023.
- Food recommendations
- The combination of grip, spice and salinity demands equally characterful partners: smoked trout, duck liver pâté, mushroom dishes with herbs, mature hard cheese or the fermented cuisines of Asia – such as miso aubergine or kimchi pancakes.
- Special features
- The name is half warning, half invitation: this is no wine for casual drinkers, but one with edge and depth. Those who appreciate natural wine will find here a masterclass in texture; those who prefer a more classical style should still give it a try – for behind its angular façade lies Loimer’s hallmark precision.
