Elisabetta Foradori has elevated the autochthonous Teroldego variety to a new level through her biodynamic work. The Morei Cilindrica comes from the family’s oldest vineyard parcels and represents a purist, almost meditative approach to this often underestimated grape. With just 12.5% alcohol, this wine displays remarkable elegance and drinkability – far removed from the heavy, over-extracted versions that Teroldego sometimes produces. The vinification in amphorae and large wooden barrels underscores Foradori’s philosophy: the wine should let the terroir speak, not the technique.
Terroir & Origin
The Campo Rotaliano plain in Trentino, situated between the Dolomites and Lake Garda, is the historic home of Teroldego. The alluvial soils with their gravel and clay layers impart a mineral tension to the wines. The alpine climate with cool nights preserves freshness and acidity, whilst warm days ensure physiological ripeness. Foradori has farmed here for generations, yet it was only the consistent conversion to biodynamics in the 2000s that revealed the true identity of the terroir.
Grape Variety & Vinification
Teroldego is one of northern Italy’s most fascinating autochthonous varieties – powerful yet not clumsy, with a natural acid structure and fine tannins. Foradori works with spontaneous fermentation and eschews oenological interventions. The ageing takes place in large amphorae, which gives the wine structure without overwhelming it with oak aromas. The result is a wine of remarkable clarity and transparency, which expresses the variety’s characteristic notes of dark berries, herbs and mineral nuances in unadulterated form.
Food Pairing Suggestions
The moderate alcohol level and vibrant acidity make this Teroldego an ideal food companion. Perfect with Speck Alto Adige, polenta with mushrooms, braised wild ragout or aged mountain cheeses from the region. Also an excellent choice with duck breast or lamb cutlets with herbs.
