Colour & Appearance
Luminous, vibrant straw yellow with brilliant reflections – a visual promise of concentration and maturity.
Nose
Fascinatingly multi-layered and cosmopolitan: orange blossom and linden blossom meet green mandarin, quince and medlar. These are joined by pickled ginger, a hint of sourdough crust and subtle cereal notes. A whisper of green tea rounds off this aromatic kaleidoscope – complex, cool, inviting.
Palate
Here the true greatness of the Furstentum reveals itself: disciplined on the attack, with powdery fine phenolics that create a stimulating herbal grip. The ripe, expansive acidity forms the backbone, whilst a slightly earthy minerality accelerates the palate. The fruit remains inseparably woven with the herbal notes – not lush indulgence, but precise tension. At 14% alcohol, this concentrated, mature vintage displays cool elegance nonetheless.
Finish

Terroir & Origin
The Furstentum is the coldest Grand Cru vineyard site in Alsace – a ten-day developmental advantage over the neighbouring Schlossberg runs through the entire year. The calcareous soils in Kientzheim and vines around 30 years old provide the foundation for this characterful wine. Domaine Albert Mann has managed the 25 hectares for generations using organic and biodynamic</strong methods.
Food Pairing Suggestions
The herbal minerality and cool acidity make it the ideal companion for Vietnamese tomato and pineapple soup, Cantonese squid with spring onions and ginger or chicken in tamarind with tomatoes and jackfruit. In general, it harmonises beautifully with the complex aromatics of Asian cuisine.
