Wine Description for Chablis Grand Cru Blanchot AOC 2023 by de l’Enclos

Colour & Appearance
Medium straw yellow with luminous reflections, indicating the youth and freshness of this Grand Cru.
Nose
A seductive aromatic profile bearing the hallmark of the Bouchard brothers: white and yellow-fleshed fruit dominates with notes of pear, apricot cream and star fruit. These are complemented by lemon curd and blanched almonds. The ageing in used oak imparts a subtle vanilla note that harmonises perfectly with the fruit – elegant and never obtrusive.
Palate
On the palate, the full class of this micro-parcel reveals itself: juicy, creamy fruit meets a silky texture and the characteristic elegant acidity structure of Blanchot. The wine feels simultaneously refined and energetic, with a saline, peppery minerality that is mouth-watering and powerful in equal measure. The oak note integrates seamlessly into the overall picture and underscores the complexity.
Finish
Long, precise and carried by fine minerality. The saline freshness lingers and leaves a lasting impression of elegance and energy.
Terroir & Origin
The grapes come from a tiny parcel of just 0.23 hectares in the lower, steeply sloping section of the Grand Cru vineyard site Blanchot. The vines, planted in 1982 by the father of the Bouchard brothers, produce wines of extraordinary concentration and finesse.
Grape Variety & Vinification
100% Chardonnay, hand-harvested on 13 September 2023. Following slow whole-bunch pressing, spontaneous fermentation took place with ageing in used oak. Bottled in November 2024 with minimal sulphur addition (59 mg/l total sulphur) – a sign of quality and precision.
Food Pairing Recommendations
This Grand Cru demands sophisticated cuisine: scallops in butter sauce, lobster, pan-fried turbot, calf’s sweetbreads or poultry in cream sauce. Also a revelation with aged Comté or Beaufort.
Special Features
A Chablis that masterfully balances traditional purity with modern oak ageing. The micro-production from this tiny parcel makes it a rarity for connoisseurs.
