Tasting Notes for Monthelie 1er Cru Les Champs Fulliots AOC 2024 by Rémi Jobard
- Character
- This Chardonnay reveals a crystal-clear, profound structure that dispenses entirely with obtrusive toasted aromas. On the palate, cool-toned fruit merges with a striking minerality and a fine, melting texture. A wine of serene elegance that convinces through transparency rather than opulence, echoing its origin in the glass.
- Terroir & Origin
- The grapes hail from the Premier Cru site Les Champs Fulliots in Monthelie, an appellation of the Côte de Beaune in Burgundy. Rémi Jobard enjoys the privilege of farming outstanding terroir in this esteemed white wine region. The entire estate has been managed strictly organically since the 1990s and holds Ecocert certification. The vineyards are worked by hand, planted with cover crops, and nurtured without synthetic fertilisers or herbicides.
- Grape Variety & Winemaking
- Single-varietal Chardonnay, shaped by Jobard’s philosophy of radical slow winemaking. The grapes undergo an extremely slow pressing over six to twelve hours using minimal pressure, ensuring only the finest juice free from bitter compounds is extracted. Maturation takes place over approximately 15 months in 600-litre Stockinger casks, which slows oxygen exchange and keeps the oak subtly in the background. Ageing through two winters imparts natural stability to the wine, allowing it to be bottled unfiltered.
- Food Pairings
- A stylish companion to refined fish dishes such as pan-roasted turbot, seared scallops in butter, or poulet de Bresse with morels. This mineral-driven Burgundy also pairs beautifully with mature Comté cheese.
