Wine Description for Chablis 1er Cru Vau de Vey AOC 2023 from de l’Enclos

Colour & Appearance
Medium straw yellow with brilliant clarity – a classic appearance for a young Premier Cru from Chablis.
Nose
Powerful and intense, this 1er Cru presents itself with a bouquet of lemon juice, lemon pips and lemon zest. These are joined by hay, white flowers and the typical Chablis signature of damp lichen on wet stone. Subtle notes of smoke, flint and green apple round out the aromatic profile.
Palate
Here the Vau de Vey shows its true class: juicy and forceful, whilst simultaneously creamy in texture. The balance is masterful – bright, ripe fruit meets forceful acidity, complemented by light tannins and phenolics. The oak remains discreet in the background, whilst juice and salt make the wine lively and mouth-watering. A Premier Cru par excellence with impressive depth and freshness.
Finish
Long, mineral and refreshing with lingering citrus fruit and saline minerality.
Terroir & Origin
The 2.77-hectare parcel belonging to Bouchard lies in the Premier Cru vineyard site Vau de Vey, a steep, east-facing slope on the left bank of the Serein. The soil of Argilo-Calcaire – calcareous clay with loam – differs from the pure Kimmeridge limestone of the right riverbank and gives the wines a more floral and lighter style. The vines, planted in 1979, were harvested between 21st and 22nd September 2023.
Grape Variety & Vinification
100% Chardonnay, spontaneously fermented and aged for 13 months – half in stainless steel and used tonneaux on fine lees. Coarsely filtered and low in added sulphur (52 mg/l total sulphur) – a natural approach that preserves terroir authenticity.
Food Pairing Suggestions
Classically with oysters, scallops or seafood. Excellent also with poached white fish, pike-perch in butter, poultry in cream sauce or goat’s cheese.
Special Features
An authentic, lively Chablis Premier Cru that perfectly reflects the character of the left bank of the Serein. Already accessible now, but with the potential for 5-8 years of bottle age.
