Tasting note
Colour & Appearance
Radiant, intense golden yellow with extremely fine, long-lasting perlage in the magnum format.
Nose
Complex and multi-layered: intense notes of dried citrus fruits, baked apple and brioche-like toastiness, underpinned by a fine chalky minerality and subtle oak spice.
Palate
The palate displays the signature De Sousa style: a creamy, full texture meets firm, lively acidity. Nuances of ripe lemon, buttered toast and saline chalk impart immense drive and complexity to the Champagne.
Finish
Infinitely long and focused. The name is to be taken literally here: the Caudalies – the unit of measurement for the length of the finish – linger on the palate for minutes with chalky freshness and spicy tension.
Terroir & Origin
The grapes come from the purest Grand Cru vineyard sites of the Côte des Blancs: Avize and Le Mesnil-sur-Oger. The deep chalk soils are unmistakably reflected in the chalky-saline texture of the 2012 vintage.
Grape Variety & Vinification
100% Chardonnay from old vines. Aged in oak casks with bâtonnage, which creates the delicate creaminess on the palate. Maturation in cool cellars carved into the chalk ensures elegant, slow ageing at a constant 10 °C.
Food Pairing
An aristocratic Champagne for haute cuisine. Outstanding with pan-seared scallops, turbot with Champagne foam or delicate veal cutlet.
Key Features
An exclusive selection of two Grand Cru terroirs from the magical 2012 vintage, sourced from the Demeter-certified biodynamic farming of the De Sousa family.
