Wine Description for Cumières Premier Cru Brut Nature LMC21 2021 1500ml Magnum by Georges Laval

Character
Georges Laval ranks among the most uncompromising advocates of biodynamic viticulture in Champagne. His Cumières Premier Cru Brut Nature embodies a radical counter-vision to industrial champagne: unsweetened, unfiltered, authentic. The blend of Chardonnay and Pinot Meunier yields a champagne of remarkable precision and depth, which reveals the terroir without any masking through dosage. The magnum format lends the wine additional ageing potential and harmonious development.
Terroir & Origin
Cumières lies on the north-facing slope of the Marne, one of Champagne’s most authentic vineyard sites. The Premier Cru classification reflects the quality of soils consisting predominantly of chalk and clay. Georges Laval has managed his parcels here for decades according to biodynamic principles – without herbicides, with minimal intervention. The 2021 vintage in Champagne was characterised by cool spring temperatures and a warm late summer, resulting in balanced ripeness with preserved freshness.
Grape Variety & Vinification
The cuvée unites the minerality of Chardonnay with the fruity fullness of Pinot Meunier, a variety traditionally dominant in Cumières. Laval vinifies in old wooden barrels, eschews fining and filtration, and does not dosage – Brut Nature means zero grams of residual sugar. This uncompromising style demands perfect grape quality and precise timing. The lees ageing is considerably longer than legally required, which imparts the champagne with complexity and creamy texture, without masking the vibrant acidity.
Food Pairing Recommendations
This bone-dry expression calls for substantial dishes: raw oysters, scallops with beurre blanc, baked turbot or sweetbreads. It also shows its strengths alongside aged Comté or goat’s cheese. The magnum bottle is ideally suited for festive occasions where a champagne of personality is called for.
