Colour & Appearance
Intense golden yellow with remarkable density – a Chablis that announces its maturity and lengthy time on lees already in the glass.
Nose
Surprisingly opulent for a Chablis: ripe yellow fruits meet exotic notes of mango, lime and papaya. The 16 months on lees leave their mark with hints of light tobacco and white chocolate. Yet the mineral character of the Kimmeridge soil remains the backbone – precise, distinctive, quintessentially Chablis.
Palate
Here the true nature of this wine reveals itself: A vibrant acidity and invigorating freshness dominate the attack. The mouth is positively watering, whilst a pronounced salinity elegantly counterbalances the fruit fullness. The texture is juicy, the tension perfectly balanced – a wine that seems made for food.
Finish
Remarkably long with persistent minerality and saline freshness. The length underscores the quality of the 40-year-old vines and the meticulous vinification.
Terroir & Origin
3 hectares in south and south-easterly exposure on the legendary Kimmeridge soil – that fossil-bearing limestone which gives Chablis its unmistakable minerality. The vines planted in 1984 deliver concentrated, characterful grapes.
Grape Variety & Vinification
100% Chardonnay, harvested on 19 September 2023. Spontaneous fermentation and impressive 16 months on lees in stainless steel – a decision that enables complexity without oak influence. With only 10 mg/l added sulphur at bottling in April 2025, this is an almost sulphite-free wine.
Food Pairing Suggestions
A versatile food companion: oysters and seafood are classics, yet the wine has sufficient substance for pan-fried fish, scallops, goat’s cheese or poultry in cream sauce. The salinity harmonises wonderfully with sushi and ceviche.
Special Features
This wine needs air – after two days in the fridge it reveals itself even more multifaceted. A Chablis that rewards patience and convincingly implements the philosophy of minimal sulphur addition without compromising stability.
