Notes
The transition to organic viticulture in 2020 came at the cost of the family’s réserve perpétuelle – a solera that had lent the Réserve nearly four decades of depth. Today, it is the unadulterated voice of the Côte des Blancs, without any trace of oak.
Tasting note
Character
A Blanc de Blancs of almost ascetic clarity: precise, mineral, carried by a saline freshness. The restrained dosage of 6 g/l allows the Chardonnay space to reveal its cool elegance. Nothing here feels overwrought; instead, the wine vibrates on the palate like wet chalk after rain. The half bottle makes it a charming start to an evening for two.
Terroir & Origin
Chouilly is the northernmost Grand Cru of the Côte des Blancs – here, where the chalk soils are at their purest, Chardonnay finds its most accomplished expression. The Vazart family cultivates around 30 plots in the village’s finest vineyard sites, including the esteemed Montaigu vineyard. The vines, with an average age of 44 years, are deeply rooted in limestone and yield grapes of silky elegance and mineral depth. It is no wonder that critic Peter Liem has described the house as the most important grower Champagne producer in Chouilly.
Grape Variety & Vinification
100 per cent Chardonnay – nothing more is needed in Chouilly. Jean-Pierre Vazart consistently opts for stainless steel rather than wood: the wine should let the terroir speak, not the cask. The result is Champagnes of linear purity, offering aromas of citrus fruits, white flowers and precisely that cool chalky minerality so prized by connoisseurs of the Côte des Blancs. Since 2020, the estate has been fully organic – a decision for which Jean-Pierre even sacrificed his nearly forty-year-old Réserve Perpétuelle. As the current cuvée demonstrates, quality has not suffered.
Food Pairings
The taut acidity and saline freshness make this Champagne a versatile everyday wine: equally harmonious with oysters or prawns as with butter-fried sole or a delicate green asparagus risotto. Sushi and sashimi also find a perfect counterpart here. Those who prefer a classic pairing might serve Comté or young Parmigiano – the nutty notes of the cheese meet the chalky precision of the wine.
