In the glass

  1. Colour

Pale golden yellow with a fine, persistent bead.

  2. Nose

Ripe apricot and brioche, accompanied by notes of mirabelle plum, almond and a hint of white blossom.

  3. Palate

Precise acidity structure with mineral tension, aromas of citrus and stone fruit, finishing saline and long-lasting.

  4. Character

Powerful and structured, yet finely knit and of great precision – a Champagne with edges, angles and plenty of personality.

  5. Pairing

Oysters, sea trout sashimi, creamy risotto with porcini mushrooms.

  6. Notes

As an Extra Brut with minimal dosage, this Champagne reveals the radically reductive signature of Cyril Bonnet, who vinifies each parcel individually and relies on spontaneous fermentation as well as minimal sulphur use. The Cuvée Perpétuelle has been aged using the solera method since 2004, with a portion of the base wines maturing in old oak casks.

Tasting note

Character
A Champagne of almost ascetic precision: zero to five grams of dosage, spontaneously fermented with wild yeasts, sulphur added only in homeopathic doses. Cyril Bonnet, who joined the family house in Chamery in 2013 and radically broke with his father’s baroque, heavily dosed style, here crafts a sparkling wine of austere elegance – bone dry, carried by a fine, almost nervous acidity, with notes of citrus fruits, green apple and a subtle, bready depth born of long ageing. The texture is taut, the mousse fine, the finish mineral and impressively long.
Terroir & Origin
The vines are rooted in the clayey, sandy and clay-limestone soils of the Premier Cru villages of Chamery, Vrigny and Coulommes-la-Montagne on the Montagne de Reims; in Chamery, the current winemaker’s grandparents still dug the cellars with shovel and pickaxe. The estate, founded in 1862 as the village’s first Récoltant-Manipulant house, today cultivates around ten hectares spread across fifty plots in Chamery, Vrigny, Coulommes-la-Montagne as well as the Grand Cru vineyard sites of Verzenay and Verzy. The vines are between 35 and 80 years old. Since 2016, the estate has been certified organic.
Grape Varieties & Vinification
The blend of Pinot Noir, Chardonnay and Pinot Meunier benefits from plot-by-plot vinification, which Bonnet carries out separately for each of his fifty vineyard sites. A portion of the base wines matures in old oak casks, the larger remainder in stainless steel tanks – always with the aim of achieving precision rather than woody notes. What makes it special: the Cuvée Perpétuelle works according to the solera principle. Since 2004, wine has been drawn off and replenished vintage by vintage, never completely emptied. Thus this Extra Brut unites the freshness of young wines with the complexity of mature reserve wines – a living archive of the terroir.
Food Pairings
The taut acidity and low dosage make this Champagne the ideal companion for oysters and raw seafood, whose salinity it balances with precision. It pairs just as well with grilled Dover sole or Japanese sashimi, where its mineral structure cleanses the delicate fatty notes of the fish. It also shows its best side alongside hard, young mountain cheese or smoked trout – always with the necessary freshness to give structure to rich flavours.
