Wine Description for Bric Del Salto Dolcetto d’Alba DOC 2025 by Sottimano

Character
The Bric Del Salto is a Dolcetto of clear provenance and artisanal conviction. Sottimano, one of the most reliable estates in the Neive section of the Langhe, treats Dolcetto not as a supporting player, but as an independent voice of the house. The name Bric – Piedmontese for hilltop – points to a precisely defined, topographically specific vineyard site and the ambition to place terroir and variety at the forefront.
Terroir & Provenance
The hills surrounding Alba provide Dolcetto with a home characterised by calcareous clay-marl soils (Tuffo and Elveziano) – the same geological diversity that makes Nebbiolo and Barbera so distinctive in this region. The continental climate of Piedmont, with warm summers and cool autumn nights, ensures a slow, aromatically dense ripening. Dolcetto matures earlier than Nebbiolo and makes the most of the finest autumn days to develop concentrated yet fresh fruit.
Grape Variety & Vinification
Dolcetto is the daily-drinking soul of Piedmont – dark in colour, with soft tannins, a natural acid structure and a characteristic interplay between dark fruit and a slightly bitter almond note on the finish. Sottimano vinifies with the care of a house that values precision over spectacle: the wine is crafted so that freshness and drinkability take centre stage, without obscuring the depth of the terroir. A dry, characterful everyday wine in the best sense.
Food Pairing Suggestions
Classically Piedmontese and remarkably versatile at table. Ideal with Tajarin al ragù, Vitello tonnato, grilled sausages or a simple tomato sugo with pasta. With Salumi, Focaccia and robust Antipasti, the Bric Del Salto reveals its convivial, unpretentious strength. A wine that doesn’t demand an occasion – but rather good food and good company.
